This tamal is made with chicken and a mole sauce that is made up of a mix of spices, chile peppers, seeds, peanuts, cocoa, and fresh roasted veggies including tomatoes and red pepper. The masa dough is made with spices and bone broth infused rice and corn flour. The tamal is then topped with olives, roasted red pepper, raisins, capres, and a prune.
